2 LBS HAEN FLANK STEAK tenderized twice
1/2 lb. fresh spinach
3 cloves garlic, chopped
1 T. olive oil
1 can Italian diced tomatoes
1/2 lb. mozzarella cheese, shredded
1 tsp. salt
1/4 cup parmesan cheese
Pepper to taste

Methods/steps
1. In a pot, wilt fresh spinach with garlic and oil.
2. Drain off excess liquid, set aside to cool.
3. Lay flank steak flat on working surface and season with salt and pepper.
4. Layer steak with spinach, tomatoes, and mozzarella.
5. Sprinkle with parmesan cheese.
6. Roll up jellyroll style and tie with butchers twine every 3 inches.
7. Brown outside in a skillet then bake at 350° for 30 minutes.
8. Remove from oven, let rest 15 minutes, and slice.
