Haen Chorizo Quesadillas
Ingredients
1 lb. HAEN CHORIZO
1/2 cup chopped onion
3 red potatoes diced small
1 cup salsa
2 cloves garlic, minced
1 fresh jalapeno pepper chopped
8 medium size flour tortillas
2 cups shredded Monterey Jack cheese
vegetable oil
Methods/steps
1. Squeeze chorizo out of casing into a medium skillet; add onion, garlic and potatoes.
2. Cook until meat is browned and potatoes are golden.
3. Stir in jalapeno and salsa; heat through.
4. Brush one side of 4 tortillas with vegetable oil; place them, oil side down, on a large baking sheet.
5. Spread sausage mixture evenly over tortillas.
6. Sprinkle cheese evenly over sausage mixture.
7. Top with the remaining tortillas and brush with vegetable oil.
8. Bake in oven at 350°F until cheese is melted and tortillas are golden OR heat in skillet a few minutes on each side until cheese is melted and tortillas are golden.
