Ham and Ranch Potato Frittata
Ingredients
1/2 lb. HAEN HAM cubed
1 tsp. vegetable oil
2 cups frozen hash browns with peppers and onions, thawed
4 eggs beaten
1/3 cup ranch dressing
1/4 milk
salsa
salt and pepper
Methods/steps
1. Preheat oven to 375°F.
2. Heat oil in 10 inch nonstick ovenproof skillet over medium high heat.
3. Add hash browns and cook 4-6 minutes or until potatoes brown; season to taste with salt and pepper.
4. Whisk eggs, dressing, and milk in a medium bowl and stir cubed ham in; pour over potatoes.
5. Cook 4-5 minutes or until the eggs begin to set, lifting the edges and allowing the uncooked egg to flow underneath.
6. Remove from stove and bake 15-20 minutes or until a knife inserted in the center comes out clean.
7. Remove and let stand 5 minutes.
8. Cut into wedges and serve with salsa.
