Hobo Dinner
Ingredients
2 T. extra virgin olive oil
3 cups frozen hash browns or cubed potatoes
2 T. butter
4 green onions, thinly sliced
1 1/2 T. flour
1 cup 2% milk
1 small tomato finely chopped
4 eggs plus 4 egg whites beaten
1/3 cup shredded cheddar cheese
salt and pepper
Methods/steps
1. In a large nonstick skillet, cook sausage until browned; remove from heat.
2. In a medium skillet, heat oil, add frozen potatoes, season with salt and pepper, and cook until browned, turning frequently.
3. In a small saucepan, melt 1 T. butter; add green onions and cook until softened.
4. Stir in flour and cook for 1 minute; stir in milk and cook, stirring, until boiling and thickened. Remove from heat and cover.
5. Add the remaining butter to the skillet with the sausage and heat to melt. Add the tomatoes, eggs, and salt and pepper to taste.
6. Cook, scrambling, until eggs are just set.
7. Divide egg mixture among 4 plates.
8. Top with hash browns, white sauce, and cheese.
