Lasagna
Ingredients
1 lb. lasagna noodles cooked al dente (shortcut: use oven ready or no bake noodles)
1 lb. mozzarella cheese
extra spaghetti or marinara sauce
MEAT SAUCE
1 lb. HAEN ITALIAN SAUSAGE
1/2 lb. HAEN GROUND BEEF
3/4 cup chopped onion
1 tsp. basil
1 tsp. oregano
1 tsp. garlic powder
1 can (28oz.) diced tomatoes
1 can (6oz.) tomato paste
1 T. parsley flakes
1 tsp. salt
CHEESE MIXTURE
16 oz. ricotta cheese
8 oz. large curd cottage cheese
2 eggs beaten
1 T. parsley flakes
1/2 cup grated Parmesan cheese
1 tsp. salt
1/8 tsp. pepper
Methods/steps
1. Brown meat and onion. Add rest of MEAT SAUCE ingredients and simmer for 1 hour.
2. Cook lasagna noodles, drain, and rinse.
3. Mix all cheese ingredients together.
4. Spoon a little spaghetti sauce in the bottom of a 9x13 pan.
5. Layer 1/2 the noodles on the bottom overlapping slightly.
6. Spread 1/2 the cheese mixture over noodles then 1/2 the mozzarella.
7. Top with 1/2 the meat sauce; then repeat layers.
8. Bake at 350° for 1 hour.
9. Let set before cutting.
*Note: sauteed zucchini, squash, or spinach can be added in between cheese layers.
