Sausage and Broccoli Stew

1 lb. HAEN CHORIZO SAUSAGE
1 head broccoli, cut in 2 in. pieces
2 T. extra virgin olive oil
1 large onion, chopped
3 cloves garlic, chopped
1/8 tsp. nutmeg
4 cups chicken stock
1 can (28oz.) stewed tomatoes, undrained
1 can (15oz.) white beans, rinsed
1 1/2 cups small pasta
salt and pepper
grated romano cheese for topping
1 head broccoli, cut in 2 in. pieces

1 can (28oz.) stewed tomatoes, undrained
1 can (15oz.) white beans, rinsed
1 1/2 cups small pasta

grated romano cheese for topping
Methods/steps
1. Bring a medium pot of water to a boil, salt it, add broccoli and boil for 3 minutes; drain and let cool.
2. In a soup pot, heat the oil; sqeeze fresh chorizo out of casing; add to oil and cook until browned.
3. Stir in onion and garlic and cook until softened, about 5 minutes.
4. Add nutmeg and salt and pepper to taste.
5. Add chicken stock, tomatoes, and 2 cups water; cover and bring to a boil.
6. Stir in white beans and cooked broccoli and return to a boil.
7. Add the pasta and cook until tender, stirring occasionally.
8. Top with cheese.
