Cajun Sausage Casserole


1 lb. HAEN ANDOUILLE sliced 1/4 inch thick
1 can whole tomatoes
1 can (4 oz.) mushroom stem & pieces
1 cup chopped celery
1 cup chopped onion
1 bell pepper chopped
1 clove garlic
1 tsp. cooking oil
1 cup uncooked long grain rice
salt and pepper to taste


1. Put cooking oil in a 3 qt. pot.
2. Add sausage and cook 10 minutes, drain oil, add onions, celery, garlic, pepper, tomatoes with juice, and mushrooms with juice; bring to a boil.
3. Salt and pepper to taste, add rice, mix well.
4. Lower heat to simmer, cover, and cook 45 minutes.
5. Do not stir while cooking.
