Cheesy Chicken Lasagna

Ingredients
2 cups HAEN FULLY COOKED CHICKEN BREASTS
finely chopped
6 lasagna noodles
2 eggs
15 oz. Ricotta cheese
1 cup mayonnaise
¼ cup grated Parmesan cheese
1 T. dried parsley flakes
1 tsp. dried thyme
½ tsp. salt
1/8 tsp. pepper
¼ cup sliced green onions
14 oz. can ¼’d artichoke hearts, chopped
2 oz. jar diced pimentos, drained
2 cups shredded Monterey Jack


Methods/steps
1. Cook noodles according to package directions; drain and rinse with hot water.
2. Beat eggs; add remaining ingredients except cheese; mix well.
3. Layer ½ of cooked noodles in sprayed 9x13 pan.
4. Top with ½ of chicken mixture and ½ of cheese.
5. Repeat layers; cover with non-stick foil.
6. Bake at 350°F for 40-50 minutes.
7. Remove from oven and let stand 10 minutes before serving.
