Pork Crown Roast
A pork crown roast is a special cut of pork from the center of two racks of bone-in pork loin tied in a circle (bones facing up) with space in the center for stuffing. Haen meats can prepare this cut for you with advance notice with a minimum order of 8 lbs. to complete the crown. This roast works well with your favorite pork seasoning combinations or Haen Meats Pork Chop & Roast Seasoning.
To Prepare: Preheat your oven to 350°. Sprinkle with salt and pepper or, as mentioned above, with your favorite seasoning or order the roast from us already seasoned. Insert meat thermometer into the meatiest section of the roast, being careful not to touch bone. Place roast on rack in roasting pan. Add water up to the cooking rack level. Cover exposed ends of bones in foil to prevent burning. Crumble additional foil and place in center of roast to help retain shape. Roast uncovered for 1 hour.
After 1 hour, begin basting roast. Use your favorite basting recipe or the juice accumulated in the bottom of the pan. Continue cooking 1 hour, basting every 15 minutes. Remove foil from center. Add your favorite dressing or try Haen Meats Homestyle Stuffing and pack dressing into center of roast. Cover with foil and continue cooking until meat thermometer registers 155-160° or 20-25 minutes per pound. Remove foil from bone tips and cover each with paper frills for eye appeal. Let roast rest 10 minutes before carving.
