Marinated Lamb Chops


1 onion sliced
2 T. red wine vinegar
1 T. lemon juice
1 T. olive oil
3/4 tsp. dried rosemary, crushed
2 tsp. dijon mustard
1 clove garlic, minced
1/2 tsp. pepper
1/4 tsp. salt
1/4 tsp. ground ginger


1. Combine all ingredients in a large resealable plastic bag.
2. Seal the bag and turn to coat.
3. Refrigerate for several hours or overnight.
4. Spray grill rack with cooking spray.
5. Grill chops, covered, over medium heat for 5-7 minutes each side or until they reach 160°.

Additional Tips

Try with steamed asparagus!
